Our biotech manufacturing facility is moving to compliance with GMA-SAFE standards. Previously, we have not held our manufacturing facility to a food safety standard as stringent as this.

A few years ago, we began implementing 5S tools to reduce changeover time. For example, sanitary piping connections and fittings were stored in a central location causing significant time to be wasted walking to and from this location. We positioned the needed parts in each manufacturing suite, greatly reducing the process setup times. Plastic pegboards were hung with wall standoffs that allowed complete washdown.

GMA-SAFE requires that these connections and fittings be stored in an enclosed area; a pegboard in the processing suite is not acceptable. Does anyone have any experience in the food industry applying lean concepts that comply with food safety standards?

Steve,

I'd guess that your GMA-SAFE standards are more stringent than our SQF standards in Dairy, as we do not have this issue. We have done something very similar, where dirty parts are removed from the line and taken to central COP. Clean items are on mobile carts, located at POU.

However, if your guideline simply states that "these connections and fittings be stored in an enclosed area", I'd see if your team can design a plexiglass enclosed cart (taking your current pegboard and encasing it). We have boards of this nature on our floor due to our washdown environment.
