So I had a confusion.
In a value stream map for a restaurant how should one factor customer demand.
Should one look at customer demand per day/ per shift or peak.My concerns is that managing flow during peak period is critical.

I'd develop a value stream map for each situation. This way you can deploy your workforce along the needed areas in each period.
