When you think of environments for a lean transformation, does a bakery come to mind? Probably not, but 365 Café was an ideal setting for lean. Plagued by expiring products, bottlenecks on the production line and quality issues, the Barcelona-based chain of bakery-cafes turned to lean as their remedy to these growing pains brought about by their recent expansion in business.

Take a look at the below video of an interview with two members of the 365 Café team who oversaw the lean transformation. They discuss many key aspects of the transformation, including their initial problems, how they managed resistance, and of course, the final results of the transformation. If you'd like more details, check out the great case study published by our friends at PlanetLean.org.
